Coffees with a light roast
The longer a bean is roasted, the more caffeine and acidity it releases. This means that light roasts contain the most caffeine (by volume) and acidity. Light roasts may have a different flavour profile because the shortened roasting process prevents some chemical changes within the bean from occurring. The origin flavours of the bean are more noticeable in light roasts because the roasting process flavours are often not prominent. Medium Roast Coffee

Roasted Dark Coffee
Because the sugars in coffee beans have time to caramelise, dark roasts have sweeter flavours. Dark roasts contain the least caffeine because they are roasted the longest. French roast is the darkest roast and has a strong smoky flavour.
